Apple Cider Cupcakes with Goat Cheese Frosting

Ingredients
For the Apple Cider Cupcakes:
  • 1⅔ cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon fine salt
  • ½ cup (1 stick, 4 ounces) unsalted butter, room temperature
  • ⅔ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup apple cider
For the Goat Cheese Frosting:
  • 1 cup (2 sticks, 8 ounces) unsalted butter, room temperature
  • 8 ounce cream cheese, room temperature
  • 8 ounces goat cheese, room temperature
  • 2 teaspoons vanilla extract
  • 4 to 5 cup powdered sugar
To assemble the Apple Cider Cupcakes:
  • ¾ cup walnuts, toasted and chopped
Instructions
To make the Apple Cider Cupcakes:
  1. Preheat oven to 350 degrees F. Line cupcake pans with liners, set aside.
  2. Whisk flour, baking powder, cinnamon, and salt together in a bowl, set aside.
  3. In the bowl of a stand mixer fitted with a paddle attachment, beat the butter for 30 seconds until smooth. Add sugar and cream on a medium speed until light a fluffy, about 2 to 3 minutes. Scrape the sides and bottom of the bowl down.
  4. Beat eggs, one at a time, followed by the vanilla.
  5. With the mixer on low, add the dry ingredients in three batches and the apple cider in two batches, beginning and ending with the dry ingredients.
  6. Use an ice cream scoop to portion the batter into the cupcake liners. The batter should fill the liners ¾ of the way.
  7. Bake for 16 to 18 minutes, rotating halfway. A toothpick inserted should come out clean.
  8. Cool completely before frosting.
To make the Goat Cheese Frosting:
  1. In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and cream cheese on a medium speed until smooth and lump free. Scrape the sides and bottom of the bowl. Add the goat cheese, beating until incorporated. Beat in the vanilla. With the mixer on low, gradually add the powdered sugar.
To assemble the Apple Cider Cupcakes:
  1. Use a large round tip to pipe the base. Coat frosting base with chopped toasted walnuts. Use a large star tip to pipe the top frosting.
