Vermont Coffee Maple Cake

Serves: 1 3-layer 8-inch cake
For the Coffee Cake:
  • 2 cups all- purpose flour
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1½ teaspoons fine salt
  • 2 tablespoons espresso powder, dissolved in 1 to 2 tablespoons of hot water
  • 1 cup (8 ounces, 2 sticks) unsalted butter, room temperature
  • ½ cup vegetable oil
  • 2 cups packed dark brown sugar
  • 5 large eggs, room temperature
  • 1 cup sour cream, room temperature
  • 2 teaspoons vanilla extract
  • 6 ounces maple morsel chips
For the Coffee Maple Frosting:
  • 2 pounds cream cheese, cubed and room temperature
  • 1 cup (8 ounces, 2 sticks) unsalted butter cubed and room temperature
  • 10 to 12 cups powdered sugar
  • 1½ tablespoons espresso powder, dissolved in 3 to 4 teaspoons hot water
  • ⅓ cup maple syrup
  • 2 teaspoons vanilla extract
  • ¾ teaspoon fine salt
To make the Coffee Cake:
  1. Preheat oven to 350 degrees F. Line 3 (8 inch) cake pans with baking spray.
  2. Whisk flour, baking powder, baking soda, and salt together, set aside.
  3. Cream butter, oil, and sugar in stand mixer fitted with a paddle attachment until light and fluffy on medium speed, about 2 to 3 minutes, scraping bowl and paddle as needed.
  4. Add eggs, one at a time, beating to incorporate
  5. In a small bowl combine sour cream, dissolved espresso powder, and vanilla.
  6. With mixer on low, add dry-ingredients in 3 additions alternately with wet-ingredients in 2 additions, beginning and ending with the dry-ingredients. Give batter a few stirs by hand with a rubber spatula to ensure engender incorporation. Fold in maple morsel chips.
  7. Divide batter evenly among prepared pans, baking for 20 to 24 minutes, rotating halfway. A toothpick inserted will come out mostly clean with a few moist, not wet, crumbs.
  8. Let cakes rest in pans for 5 minutes before inverting onto a wire rack to cool completely.
To make the Coffee Maple Frosting:
  1. In a stand mixer fitted with a paddle attachment, beat cream cheese and butter on medium speed until smooth and incorporated. Scrape frequently to prevent lumps.
  2. In a small bowl whisk dissolved espresso with maple syrup and vanilla.
  3. Lower speed, gradually add powdered sugar alternately with wet-ingredients. Scrape bowl and paddle as needed. Add salt.
  4. Once incorporated, raise speed to medium-high and best for 1 to 2 minutes.
To assemble the Coffee Maple Cake:
  1. Dollop a bit of frosting onto a cake board secure first cake layer. Pipe frosting, using an offset spatula to even put layer. Repeat process with second layer. Top with final, third layer. Chill for 30 minutes. Apply a crumb coat. Chill for 15 minutes. Apply a thicker coat of frosting, smoothing with a bench scraper. Top cake with a border of frosting.
  2. Drizzle with warm maple syrup.
